Today we are going to make Healthy Ridge Gourd. Luffa is a genus of tropical and subtropical vines in the cucumber family (Cucurbitaceae). In everyday non-technical usage, the luffa, also spelled loofah, usually refers to the fruits of the species Luffa acutangula. It is cultivated and eaten as a vegetable but must be harvest at an early stage of development.

The vegetable is popular in India, China and Vietnam. When the fruit is fully ripening, it is very fibrous. The fully developed fruit is the loofah scrubbing sponge source, which is used in bathrooms and kitchens.

Ridge gourd is also called tori or turai in Hindi and dodka in Marathi or beerakaya in Telugu and Heerekayi in Kannada. Today in our channel, we are going to make a quick and easy recipe using Ridge Gourd. It’s very healthy and quick to prepare at home. This recipe can be used as a side dish with your lunch and dinner. This has all the goodness of Ridge Gourd.

Also, we will prepare this with low oil so that it will be a healthy dish. I designed this for my husband during his weight loss journey. It is good to include this in your meals as it provides a good source of it’s very low in calories, and it has protein, it is deficient in carbohydrates And fats. It has a good source of dietary fiber.
